San’Dera Nation’s transformation in the documentary Forks Over Knives is impressive. She is eloquent and compelling in her description of how type 2 diabetes hypertension (high blood pressure) affected her well-being and affected her life, before she learned how to reverse type 2 diabetes and reverse her high blood pressure during the course of the Forks Over Knives documentary.

As you watch Forks Over Knives (online link below), when we first meet San’Dera Nation in the film, she describes some of the health conditions that led to her type 2 diabetes (and high blood pressure) diagnosis, and it’s easy to empathize how frightening it would be to experience those symptoms.
As San’Dera described the strange illness,
I wanted to say something, but it wasn’t coming out. I was getting really shaky and sweats, and then I was cold and sick and fatigued, and my stomach hurt and everything. So I went to the doctor, and that’s when he diagnosed me with hypertension and diabetes.”
She continued,
I was in denial for a while. I heard what they said, but I was in denial, like, [shaking her head no.] I still ate things I shouldn’t have. I didn’t really get the education that I needed to know, so I really depended on that pill to save me.”

This was not the health destiny she wanted. Instead, she was willing to choose health, with the guidance of Dr. Caldwell Esselstyn and his wife, Ann Esselstyn.
The documentary follows San’Dera Nation as she meets with renowned physician Dr. Caldwell Esselstyn (who is also a former Olympic rowing champion) and his wife Ann Esselstyn.
Dr. Esselstyn recommended that she treat her illnesses with a whole foods, plant-based diet. Dr. Esselstyn and his wife Ann helped San’Dera learn about the kinds of delicious, filling whole food plant-based foods that could reverse her type 2 diabetes and bring her blood pressure down to normal levels (along with helping her to avoid all of the kinds of diseases that are caused by eating the standard Western diet.)
It was a little hard, because I had been eating fatty foods and grease and everything for 38 years, for as long as I can remember, so it was kind of hard to go from that to changing the next day completely.”
San’Dera persisted in her choice to regain her health. San’Dera described a moment of weakness, in which she was a little tempted by a less-than-healthy food, but then Ann Esselstyn called her out of the blue, just to check in with her to see how she was doing. San’Dera appreciated the support from Dr. Esselstyn and his wife Ann, checking up on her and encouraging her. “It gave me chills to know that she called at that moment.”
San’Dera also described how, as part of her journey to health and reversing type 2 diabetes, she kept a journal and wrote about the challenges she faced in her journal. She encourages others facing similar challenges to keep a journal and write about those challenges, as a way to stay strong and know that it’s okay; you can do this.
In the documentary, the narrator pointed out the irony that San’Dera works at a diabetes outpatient center (where patients are treated with standard prescription drug protocols), but San’Dera herself chose to cure her type 2 diabetes instead through whole foods plant-based nutrition.
Within only two months after switching to whole food plant-based foods, San’dera experienced dramatic effects on her type 2 diabetes and hypertension.
Since I’ve been on a plant-based diet, my blood pressure has been wonderful. My blood sugars are [down in the 80s, 70s, 60s.]
So I was alarmed when it was 60. I thought, ‘Aah! Isn’t that bad? It’s 60?’
[So] I talked to the diabetes educator, who is wonderful. She said, ‘No, that’s a normal blood sugar. You’re pancreas is working, your diabetes is reversing.'”
From San’dera’s description in the film, her own regular physician seemed — skeptical — about San’Dera’s new lifestyle, and didn’t seem to even understand why San’Dera would have the goal and determination to get off the diabetes drugs entirely. San’Dera described her physician as exclaiming, “What is that doctor trying to do? Take you off your medications?!”
San’Dera affirmed, “I’m looking like, [nodding yes], “Yes, I’m hoping — that’s the goal.”
Diplomatically, San’Dera simply noted, “So there are still people we have to make believers.”
By the end of the documentary, San’Dera shared how much she enjoys some of her favorite foods: fresh fruit. She described the delicacy and sweetness of white peaches and how peaches now had become for her the sweetest, delicious treats, because her taste buds have become more attuned and sensitive, now that she has switched to whole foods plant-based foods.
[I agree with Ann Esselstyn that eating whole foods plant-based foods,] ‘you really start tasting the real taste of what you’re eating,’ cause I’d eat a peach, and you’d think… I was in heaven with my white peaches I get to eat, and that feels good to be able to eat, bringing the sugar down, losing the weight, your whole everything changes.”

San’Dera’s excellent results went far beyond reversing her type 2 diabetes and hypertension.
Mentally, [I no longer have] the sluggishness, the fear of the disease progressing. Because I feel I’m in control and have power of taking it back the right way now. So, mentally, I feel great. I’m eating the things I should eat. . . . You know, I think we’re a little dependent on, our doctors and the medications. We should take a little bit more responsibility and check it out for ourselves.”
