San’Dera Nation’s transformation in the documentary Forks Over Knives is impressive. She is eloquent and compelling in her description of how type 2 diabetes hypertension (high blood pressure) affected her well-being and affected her life, before she learned how to reverse type 2 diabetes and reverse her high blood pressure during the course of the Forks Over Knives documentary.

Plus, she just seems like such a nice person, as well as a devoted mother of five children. From the beginning of her story, all the way through to her dramatic excellent health turn-around, Forks Over Knives viewers are rooting for her.

As you watch Forks Over Knives (online link below), when we first meet San’Dera Nation in the film, she describes some of the health conditions that led to her type 2 diabetes (and high blood pressure) diagnosis, and it’s easy to empathize how frightening it would be to experience those symptoms.
As San’Dera described the strange illness,

I wanted to say something, but it wasn’t coming out. I was getting really shaky and sweats, and then I was cold and sick and fatigued, and my stomach hurt and everything. So I went to the doctor, and that’s when he diagnosed me with hypertension and diabetes.”

She continued,

I was in denial for a while. I heard what they said, but I was in denial, like, [shaking her head no.] I still ate things I shouldn’t have. I didn’t really get the education that I needed to know, so I really depended on that pill to save me.”

This was not the health destiny she wanted. Instead, she was willing to choose health, with the guidance of Dr. Caldwell Esselstyn and his wife, Ann Esselstyn.

The documentary follows San’Dera Nation as she meets with renowned physician Dr. Caldwell Esselstyn (who is also a former Olympic rowing champion) and his wife Ann Esselstyn.

Dr. Esselstyn recommended that she treat her illnesses with a whole foods, plant-based diet. Dr. Esselstyn and his wife Ann helped San’Dera learn about the kinds of delicious, filling whole food plant-based foods that could reverse her type 2 diabetes and bring her blood pressure down to normal levels (along with helping her to avoid all of the kinds of diseases that are caused by eating the standard Western diet.)

It was a little hard, because I had been eating fatty foods and grease and everything for 38 years, for as long as I can remember, so it was kind of hard to go from that to changing the next day completely.”

San’Dera persisted in her choice to regain her health. San’Dera described a moment of weakness, in which she was a little tempted by a less-than-healthy food, but then Ann Esselstyn called her out of the blue, just to check in with her to see how she was doing. San’Dera appreciated the support from Dr. Esselstyn and his wife Ann, checking up on her and encouraging her. “It gave me chills to know that she called at that moment.”

San’Dera also described how, as part of her journey to health and reversing type 2 diabetes, she kept a journal and wrote about the challenges she faced in her journal. She encourages others facing similar challenges to keep a journal and write about those challenges, as a way to stay strong and know that it’s okay; you can do this.

In the documentary, the narrator pointed out the irony that San’Dera works at a diabetes outpatient center (where patients are treated with standard prescription drug protocols), but San’Dera herself chose to cure her type 2 diabetes instead through whole foods plant-based nutrition.

Within only two months after switching to whole food plant-based foods, San’dera experienced dramatic effects on her type 2 diabetes and hypertension.

Since I’ve been on a plant-based diet, my blood pressure has been wonderful. My blood sugars are [down in the 80s, 70s, 60s.]
So I was alarmed when it was 60. I thought, ‘Aah! Isn’t that bad? It’s 60?’
[So] I talked to the diabetes educator, who is wonderful. She said, ‘No, that’s a normal blood sugar. You’re pancreas is working, your diabetes is reversing.'”

From San’dera’s description in the film, her own regular physician seemed — skeptical — about San’Dera’s new lifestyle, and didn’t seem to even understand why San’Dera would have the goal and determination to get off the diabetes drugs entirely. San’Dera described her physician as exclaiming, “What is that doctor trying to do? Take you off your medications?!”
San’Dera affirmed, “I’m looking like, [nodding yes], “Yes, I’m hoping — that’s the goal.”
Diplomatically, San’Dera simply noted, “So there are still people we have to make believers.”

By the end of the documentary, San’Dera shared how much she enjoys some of her favorite foods: fresh fruit. She described the delicacy and sweetness of white peaches and how peaches now had become for her the sweetest, delicious treats, because her taste buds have become more attuned and sensitive, now that she has switched to whole foods plant-based foods.

[I agree with Ann Esselstyn that eating whole foods plant-based foods,] ‘you really start tasting the real taste of what you’re eating,’ cause I’d eat a peach, and you’d think… I was in heaven with my white peaches I get to eat, and that feels good to be able to eat, bringing the sugar down, losing the weight, your whole everything changes.”

San’Dera’s excellent results went far beyond reversing her type 2 diabetes and hypertension.

Mentally, [I no longer have] the sluggishness, the fear of the disease progressing. Because I feel I’m in control and have power of taking it back the right way now. So, mentally, I feel great. I’m eating the things I should eat. . . . You know, I think we’re a little dependent on, our doctors and the medications. We should take a little bit more responsibility and check it out for ourselves.”

Florida Dad & Business Owner Reversed Type 2 Diabetes Naturally

At the beginning of the film, Joey describes the effects of type 2 diabetes on his life, and the effects of all of the prescription drugs he was taking at the time.

The camera follows him as he shows his rows of prescription drugs in front of him. The camera follows him as he injects his belly with a needle, as he talks about how he injects himself twice a day, (every day, year in and year out).

In those brief moments, as the camera follows him jabbing his belly with the needle, it’s uncomfortable for the viewer to watch that needle jab into his belly. It’s easy to see why no one — no one! — would want to face that reality, day in and day out, year in and year out, as Joey Aucoin had already done for 4 years since he was first diagnosed with type 2 diabetes.

That is, before he REVERSED his type 2 diabetes, naturally, in a matter of weeks.

In the beginning of the documentary, before he made the changes that reversed his diabetes, Joey Aucoin said, “I tell everybody… the joke with everybody with me is: I don’t eat to live, I live to eat. And I… my whole life, I ate whatever I wanted.” Four years earlier, doctors discovered Joey had a dangerously high cholesterol level of 320, and a hazardous blood sugar level of 480, which made him a type 2 diabetic as well as a “prime candidate for a heart attack and a stroke.”

In Forks Over Knives, Joey Aucoin described his daily pill and injections regimen, which at the time included two pills for diabetes, one for cholesterol, one for high blood pressure, and in addition, an injectable drug (jab/injection in his stomach) every morning before breakfast, and every night before dinner.

And that’s what I’ve been doing for almost four years now.
And I know it makes me tired, and I just…
I just don’t feel normal.
I only sleep four hours a night or so.
I just hate taking them.”

Later, the documentary follows Joey Aucoin as he went to see medical doctors in California, Dr. Matt Lederman (internist) and Dr. Alona Pulde (family medicine).

In the documentary Dr. Lederman read out loud Joey Aucoin’s answers to a form Joey had filled out about his health goals, as well as a list of the current health ailments and issues he was experiencing while eating the standard Western diet.

These were the top health goals Joey Aucoin listed:

(1) Eliminate the shots and medicines, “Get off this stuff.”
(2) Sleep well at night [he was not sleeping well.]
(3) Stop feeling tired and run down, and lose weight.

These are the additional health issues Joey Aucoin listed, with the goal to reverse the following chronic, continuous issues he faced (as a result of eating the standard American/Western diet, high calorie, low nutrition foods).

Quick Reversal of Type 2 Diabetes: Mebane, NC Residents Featured in “PlantPure Nation” Documentary

As documented in the film, Plant Pure Nation, reversal of type 2 diabetes, lowered cholesterol and lowered blood pressure are just a few of the life-changing results of switching to a whole food plant-based diet for life, in as quickly as only a few weeks.

Particularly moving in the film is the story of a woman from the Mebane, North Carolina area, Patty Jones, the owner of a daycare center, who had previously been diagnosed with type 2 diabetes, and prescribed diabetes drugs and related paraphanalia to go along with the diagnosis. She had just been told by her medical doctor that the next step was that she would now have to start taking insulin, too. “She told me, your next step is insulin. She told me there is no cure for diabetes. She did not want this to be her health destiny: who would?

She took the opportunity to join in the PlantPure Nation film-in-progress’ invitation to eat this way for ten days. Participants picked up the delicious, healthy meals prepared for them, from a restaurant on the quaint main street of the little town of Mebane, NC.

At the beginning and end of the ten days, each participant’s blood was drawn and blood work run / biometric testing (before and after), in order to quantify the results of eating this way for just ten days.

Even the head of the blood testing company who ran the blood work for the ten-day PlantPure Nation documentary’s “JumpStart” meal programs in Mebane, NC expressed astonishment at the results. He was amazed by the dramatic, positive effects that resulted simply from nutrition, when the PlantPure participants switched to eating the prepared-for-them whole food plant-based meals for ten days. The health benefits include all areas of health, including heart health. Eating this way not only can reverse type 2 diabetes, but also prevent and reverse heart disease (as well as most other diseases and chronic illnesses). He said,

I have worked over the years with many of the manufacturers that make statins. And LDL is the focus. LDL is the number that they all want to bring down, because it shows improved metabolic health. It is critical that any type 2 diabetic who switches to healthy nutrition and makes “diet and lifestyle” changes must work closely under the supervision of their medical doctor so that the diabetes drugs can be reduced and eliminated, to the extent and level that they are no longer needed.

Continuing to take the diabetes drugs after a person has reversed the need for them would be very dangerous, so their doctors must closely monitor their progress as they switch to whole food plant-based healthy nutrition.

In this case, Patty Jones, the Mebane, NC woman featured in “PlantPure Nation” who reversed her type 2 diabetes (after only ten days of eating the prepared-for-her whole food plant-based meals) had not yet even filled the prescription for insulin, since she had just received the prescription earlier the same day Nelson Campbell came to speak at her church.

After making the switch to whole food plant-based nutrition for life she happily pointed out in the film that she never needed to fill the prescription.

My favorite foods are fruits. And being on the plant-based diet, I can eat my fruits now, without running my blood sugar numbers up out of the sky. They started out at 340, 350, when I first started. Now I am at between 125 and 130.” She continued, “Once I got back to my doctor’s office, to see my … favorite doctor … we stood in there, she’s talking, and I said, ‘You need to be telling the other patients about it. She describes how her medical doctor’s reaction to her excellent results was . . . disappointing.

In response to her blood work (now showing normal, healthy readings), her medical doctor told her something like, “Great, the drugs are working. Keep taking the drugs.” Even though she had never filled the insulin prescription, never taken the insulin, and it was simply delicious healthy foods over the course of those two weeks (and going forward, for life) that had reversed the type 2 diabetes.

When she later asked her medical doctor to tell the doctor’s other [type 2 diabetic] patients that they can reverse their type 2 diabetes just by eating this way, as she did, her doctor “pretended that she couldn’t hear” what her (formerly type 2 diabetic) patient was saying to her.

The viewer gets the impression from her description that her doctor did not WANT to hear or know anything about a simple solution that did not involve a lifetime of drugs, drug paraphanalia, needles, testing, constant doctor visits, and all of the terrible maladies that type 2 diabetes can cause: heart disease, blindness, amputations, neuropathy, death from diabetes complications. Also, the side effects of the drugs and insulin, especially when taken over a long period of time.

Why wouldn’t a medical doctor welcome a solution that can so simply reverse type 2 diabetes, and all of the heartbreak and unnecessary suffering, that comes with it?

The good news is that many medical doctors now are discovering the power of whole food plant-based nutrition to cure and prevent disease, including type 2 diabetes.
